Keto-Friendly Cauliflower Fried Rice

Ingredients:-1 medium-sized cauliflower head

-2 tablespoons avocado oil

-2 cloves garlic, minced

-1 small onion, diced

-1 cup mixed vegetables (such as bell peppers, carrots, and peas)-2 tablespoons tamari or coconut aminos (soy sauce substitute)-2 eggs, beaten

-2 green onions, chopped

– Salt and pepper to taste


1. Cut the cauliflower into florets and pulse in a food processor until it reaches a rice-like consistency. Set aside

2. Heat the avocado oil in a large skillet or wok over medium heat

3. Add the minced garlic and diced onion to the skillet and sauté until fragrant and slightly golden

4. Add the mixed vegetables to the skillet and cook until they are tender-crisp, about3-4 minutes

5. Push the vegetables to one side of the skillet and add the beaten eggs to the other side. Scramble the eggs until cooked through

6. Combine the scrambled eggs with the vegetables and add the cauliflower rice to the skillet

7. Stir in the tamari or coconut aminos, salt, and pepper. Cook for an additional5-7 minutes, stirring occasionally, until the cauliflower rice is tender

8. Remove from heat and garnish with chopped green onions

9. Serve hot as a main dish or as a side with your favorite keto protein.

Note: Feel free to customize this recipe by adding cooked shrimp, chicken, or tofu for added protein. You can also incorporate other keto-friendly ingredients such as mushrooms, broccoli, or zucchini. Enjoy!
